1. Welcome to the kitchen Meet your instructor in our central Athens studio and discover the seasonal menu and the traditions behind each dish. Settle into your station and prepare to work in pairs. 2. Cook a Greek feast from scratch Begin with a highlight of the class: making traditional phyllo entirely by hand. Mix and knead the dough, let it rest, then roll it paper-thin before shaping and filling your own pie. Continue with classic Greek starters, a seasonal salad, a main course and dessert. Your instructor demonstrates each technique step by step, helping you understand not only what to do, but why it works. No previous experience is needed. 3. Share the table When the cooking is finished, gather around the table and enjoy the meal while everything is fresh from the oven. Taste the contrast of crisp phyllo, fragrant herbs, ripe produce, olive oil and slow-cooked flavours, accompanied by Greek wine, beer, soft drinks and water. Τhe recipes are emailed after the class.
